Thuvara Parippu Thoran


Ingredients:
Toor dal/ Thuvara Parippu: 1 cup
Grated coconut: 1/4 cup
Garlic: 2-3 nos
Red chilly: 6-8 nos
Shallots: 10-12 nos
Turmeric powder: 1 tsp
Salt: to taste
Mustard seeds; 1 tsp
Curry leaves:
oil: 1 tbsp


Method:
Coarsely grind Coconut, red chilli, shallots and garlic. Cook dal with enough water, add turmeric powder and salt. When all the water evaporates, add the grinded items and cover with cooked dal. cover it with lid and cook till the raw smell goes. Remove from fire. Pour some oil in another kadai, splutter mustard seeds, add curry leaves. Pour this seasoning over the dal.

Broccoli Thoran

Ingredients: 

Broccoli: 2 cup
Grated Coconut: 3/4 cup
Green chili: 4-5 nos
Onion Medium sized: 1 no
Curry Leaves: 1 no
Salt: to taste
Oil: 1 tbsp
Mustard Seeds:1 tsp
Red chili: 2-3 nos
Turmeric powder: 1/2 tsp


Method: 

Mix together broccoli, turmeric powder, salt and grated coconut. Heat oil in a pan, splutter mustard seeds, add red chili and curry leaves, when curry leaves turns crisp, add the onion, fry well. Add the broccoli mix, cover and cook the mixture on low flame for 5-10 minutes or till done. Open the lid and fry till the mixture turns dry.

Cauliflower Cherupayar Thoran


Ingredients:
Cauliflower chopped: 1cup
Cherupayar/Green Gram: 1/4 cup
Turmeric powder: 1tsp
Green chili chopped: 2-3 nos
Salt: to taste
Sliced shallots: 4-5 nos
Curry leaves: few
Grated coconut: 1/2 cup
Oil – 1 tbsp

Method:
Cook green gram with enough water,turmeric powder, salt and set aside. Cobine cauliflower turmeric powder, green chilli, shallots and grated coconut. Heat oil in a pan, splutter mustard seeds, add curry leaves. Add the preapred mix, saute well. Cover and cook for 5-10 minutes. Add the cooked greengram and cook for another 2-3 minutes. Serve with rice.

Chena-Muthira koottu Curry


Ingredients:
Chena/ Yam: 1 3/4 cup
Horse gram: 1 cup
Grated coconut: 1 cup
Cumin seeds 2 tsp
Green chilly: 4 nos
Small onion: 5 nos
Mustard seeds: 1 tsp
Oil: 1-2 tbsp
Red chilly flakes: 2 nos
Fenugreek seeds: 1 tsp
Curry leaves: few


Method:
Soak horsegram for 2 hrs in water and cook yam and horse gram seperately. Grind together coconut, cumin seed, green chilly, small onion coarsely. Add this to the cooked horsegram. Add cooked yam to this. cover and cook for 5-10 minutes in low flame. Heat oil in another pan, splutter mustard seeds n fengreek seeds, fry  red chilly flakes, curry leaves and pour the seasoning over the curry.

Pavakka-Parippu Thoran


Ingredients:
Bittergourd/Pavakka chopped: 1cup
Toor dhal: 1/4 cup
Turmeric powder: 1tsp
Green chili chopped: 2-3 nos
Salt: to taste
Sliced shallots: 4-5 nos
Curry leaves: few
Grated coconut: 1/2 cup
Oil – 2 tbsp

Method:
Cook dhal with water, 1/2 turmeric powder and salt, keep it aside. Combine bittergourd, 1/2 tsp tumeric powder, green chilli and grated coconut with your hands. Heat oil in a pan, splutter mustard seeds, add curry leaves and shallots, saute well . Add the preapred bittergourd mix, saute well. Cover and cook for 5 minutes. Remove lid and add the cooked dhal, Saute well and cook for another 2-3 minutes. Serve with rice.

Beetroot Thoran

Ingredients:

Beetroot chopped: 1 1/2 cup
Onion: 1 small
Grated coconut: 1/4 cup
Ginger: 1 tsp
Green chilli: 3 nos
Turmeric powder: 1/4 tsp
Mustard seeds: 1/4 tsp
Rice: 1/2 tbsp
Curry leaves: 1 spring
Salt: 1/4 tsp
Oil

Method:
Combine chopped beetroot, onion, grated coconut, green chilli, ginger, salt and turmeric powder, mix them well with your hands. Heat oil in a pan, add mustard seeds and  rice, allow it to splutter, add curry leaves. Then add Beetroot mixture. Cover and cook for 5 minutes. Serve hot with rice

Vendakka-Mutta Thoran


Ingredients:
Vendakka/Ladies finger: 250gm
Grated coconut: 1/2 cup
Egg: 2 nos
Onion: 1 small
Green chilli: 2-3 nos
Turmeric powder: 1 tsp
Pepper powder: 1 tsp
Salt: to taste
Curry leaves: few
Mustard Seeds: 1/2 tsp
Oil

Method:
Clean and cut ladies finger into small pieces. Combine grated coconut, onion, green chilli, salt and turmeric powder with your hands and keep aside. Heat oil in a pan,add mustard seeds and allow to splutter, add curry leaves and fry for 1 minute. Add ladies finger and saute for 5 minutes uncovered. Add coconut mixture to this, Cover and cook for 3-4 minutes. Beat egg with salt and pepper powder. Make a small space in the centre, add beaten egg to this and stir well. Cover and cook for another 1-2 minutes. Remove from fire. Serve hot.

Cabbage with Black Eyed Beans Thoran


Ingredients:
Cabbage chopped: 1 cup
Black eyed beans: 1/4 cup
Grated coconut: 1/4 cup
Onion chopped: 1 small
Green chilli: 3-4 pcs
Curry leaves: 1 spring
Turmeric powder: 1 tsp
Salt: to taste
Cumin seeds: 1 tsp
Mustard seeds: 1 tsp
Red chili flakes: 1-2 pcs

Method:
Clean and wash beans. In a pressure cooker add beans, salt, turmeric powder and enough water, cook until it turns soft and keep aside. Combine cabbage, grated coconut, onion, green chilli, curry leaves and salt with your hands. Heat oil in a pan, splutter mustard seeds and cumin seeds, add red chilli flakes. Add cabbage mixture to this, cover and cook for 2-3 minutes. Then add cooked beans, saute well. Cook for another 3-4 minutes. Serve hot with rice

Uluvayila (Fenugreek Leaves) Egg thoran

Ingredients:
Uluvayila/Methi Leaves: 1 bunch
Onion chopped: 1 small
Grated coconut: 1/4 cup
Green chilli chopped: 2-3 pcs
Egg: 1
Curry leaves: 1 spring
Mustard seeds: 1/4 tsp
Red chilli flakes: 1-2
Turmeric powder: 1/4 tsp
Pepper powder: 1/4 tsp
Salt: to taste
Oil: 1 tbsp

Method:
Beat egg with salt and pepper powder and keep aside. Combine chopped uluvayila, onion, green chilli, turmeric powder and grated coconut with your hands. Heat oil in a pan add mustard seeds, when its starts crackle add curry leaves and red chilli flakes. Add uluvayila mix and sauté well. Cover and cook for 02-03 minutes. Remove lid and make a small space in the centre, pour egg batter to this and stir well. Cook for another 2-3 minutes. Serve hot with rice.

Cluster Beans Thoran

 
Ingredients:

Cluster beans: 2 cups
Shallots: 4-5 pcs
Grated Coconut: 1/2 cup
Green chillies: 2-3 pcs
Mustard seeds - 1 tsp
Turmeric powder: 1/4 tsp
Curry leaves: few
Salt: 1/2 tsp
Oil: 1 tbsp

Method:
Clean and cut the beans into very small pieces. Combine beans, grated coconut, shallots, green chilli, salt and turmeric with your hands. Heat oil in a pan. Add mustard seeds and when they splutter, add curry leaves. Add the beans mixture and saute well. Cover and cook for 5-10 minutes in low flame. Serve hot with rice.

Cabbage-Carrot-Beans thoran



Ingredients:

Cabbage chopped: 1/2 cup
Carrot chopped: 1/2 cup
Beans chopped: 1/2 cup
Grated coconut: 3/4 cup
Small Onion chopped: 4-5 pcs
Ginger: 1 tsp
Green chilly: 4-5 pcs
Curry leaves: few
Mustard seeds: 1 tsp
Turmeric powder: 1 tsp
Coconut oil: 1 tbsp
Salt: 1 tsp

Method:
Combine all the above ingredients with your hands. Heat oil in a pan, splutter mustard seeds and curry leaves. Add prepared mix, Cover and cook on a low flame for 5 minutes. Serve with rice

Pacha Payar (Long Beans) Thoran


Ingredients:
Pacha Payar/Long Beans: 1/2 kg
Shallots: 3-4 pcs
Grated Coconut: 1/2 cup
Green chillies: 2-3 pcs
Mustard seeds - 1 tsp
Turmeric powder: 1/4 tsp
Curry leaves: few
Salt: 1/2 tsp
Oil: 1 tbsp

Method:
Clean Cut beans into very small pieces. Combine long beans, grated coconut, shallots, green chilli, salt and turmeric with your hands. Heat oil in a pan. Add mustard seeds and when they splutter, add curry leaves. Add the mixture and saute well. Cover and cook for 5-6 minutes in low flame. Serve hot with rice.

Kaya-Vanpayar(Banana-Red Chouri) Thoran



Ingredients :
Raw plantain: 2 cup
Vanpayar/Red Chouri: 1 cup
Turmeric powde: 1 tsp
Red chilli powder: 1/2 tbsp
Salt: to taste

For Grinding:
Grated coconut: 1/2 cup
Cumin Seed: 1 tsp
Shallot: 8-10 pcs
Turmeric powder: 1/2 tsp
Green chilli: 2-3 pcs
Garlic chopped: 1 no


For Seasoning:
Mustard seeds: 1 tsp
Shallots chopped: 1 pc
Curry leaves: 1 spring
Red chilli: 2-3 pcs
Oil:

Method:
Cook vanpayar with enough water, add turmeric powder, red chilli powder, salt to this. Coarsely grind coconut, shallots, garlic, cumin seed, green chilli in a mixer. Cook kaya/platain with shallots, turmeric powder, salt and water till done. Add coocnut mix into the cooked plantain , cover and cook for 2-3 minutes. Add cooked red chouri and mix well. Again cook for 4-5 minutes. Heat oil in another pan, splutter mustard seeds. Add shallots, curry leaves, red chilli . Saute till golden color. Pour this seasoning over the curry. serve hot with rice.

Cabbage-Cherupayar (Green Gram) Thoran

Ingredients:
Cabbage chopped: 2 cup
Cherupayar/ Green gram: 1/2 cup
Shallots chopped: 1/4 cup
Green chillies: 3-4 nos
Grated coconut: 1/2 cup
Turmeric powder: 1/2 tsp
Mustard seeds: 1 tsp
Red chillies flake: 1-2 nos
Curry leaves: few
Coconut oil:
Salt:

Method:
Cook green gram with little tumeric powder, salt & water. Mix together cabbage, onions, chillies, grated coconut, turmeric powder and salt with your hands. Heat oil in a pan. Add mustard seeds, allow it to splutter. Then add dry red chillies and curry leaves to it. Add the cababge mixture into this and allow to cook it on low flame for 2-3 minutes. Add cooked green gram/cherupayar and cook for 5 minutes. remove from fire. Serve hot with rice

Padavalanga (Snake Gourd) Thoran



Ingredients:

Snake gourd/Padavalanga chopped: 11/2 cup
Toor dhal: 1/2 cup
Turmeric powder: 1/2 tsp
Green chili chopped: 2-3 pcs
Salt: to taste
Sliced shallots/onion: 1/4 cup
Curry leaves: few
Grated coconut: 1/2 cup
Oil – 2 tbsp

Method:
Cook dhal with water, turmeric powder and salt and keep it aside. Combine snake gourd, tumeric powder, green chilli and grated coconut with your hands. Heat oil in a pan, splutter mustard seeds, saute curry leaves, shallots for 4 minutes. Add the preapred snake gourd mix, saute well. Keep cover and cook for 5 minutes. Remove lid and add the cooked dhal. Saute well and cook for few min. Serve with rice.

Ingredients:
Spinach: 1 bunch
Small onion: 2 tbsp
Grated coconut: 1/4 cup
Toor dal: 1/2 cup
Green chilli: 3-4 pcs
Turmeric powder: 1/4 tsp
Mustard seeds: 1/4 tsp
Curry leaves: 1 spring
Red chilli: 1-2 pcs
Salt: 1/4 tsp
Oil

Method:
Cook toor dal with water and salt and keep it aside. Combine chopped spinach, small onion, grated coconut, green chilli, salt and turmeric powder, mix well with hands. Heat oil in a pan, add mustard seeds, curry leaves and red chilli. Allow it to splutter, add spinach mix. Cover and cook for 2-3 minutes. Remove the lid and add cooked toor dal and mix well. Cook another 2-3 minutes. Serve hot with rice

Muringayila(Drumstick Leave) Egg Thoran


Ingredients:

Muringayila: 2 cup
Egg: 2
Small onion chopped: 2 tbsp
Grated coconut: 1/2 cup
Green chilli: 2-3 pcs
Mustard seeds: 1/4 tsp
Rice: 1/4 tsp
Turmeric powder: 1/4 tsp
Salt: to taste
Oil
Pepper powder: 1/4 tsp
Curry leaves

Method:

Beat the eggs using 1/4 tsp pepper powder and keep it aside. Combine muringayila, grated coconut, small onion, green chilli, turmeric powder and salt with hands. Heat oil in a pan add mustard seeds and rice, when its starts crackle add curry leaves. Add prepared drumstick leaves mix. Sauté well. Keep cover and cook for 2-4 minutes. Uncover and make a small well in the middle of the spinach and pour the beaten eggs. Stir well. Cook for another 5 minutes. Serve hot with rice.

Cheera Thoran/Red Spinach Thoran


Ingredients:
Red spinach/ Cheera: 1 bunch
Small onion: 1-2 tbsp
Grated coconut: 1/4 cup
Green chilli: 2 pcs
Turmeric powder: 1/4 tsp
Rice: 1/2 tsp
Mustard seeds: 1/4 tsp
Curry leaves: 1 spring
Salt: 1/4 tsp
Oil

Method:
Clean the spinach leaves and chopped finely. Add onion, grated coconut, green chilli and turmeric powder, mix them well with hands. Heat oil in a pan, add mustard seeds, rice and curry leaves. Then add spinach leaves. Cover and cook for 2-3 minutes. Remove lid and cook another 1-2 minutes. Spinach thoran is ready to serve,
