Baked Pasta


Ingredients:
Pasta: 2 cup
Carrot grated: 1 cup
Cabbage: 3/4 cup
Frozen peas: 1/2 cup
Mozrella cheese: 2 tbsp
Garlic: 2 tbsp
Italian Spagetti sauce: 1/4 cup
White pepper powder: 1 tbsp
Chicken thighs: 2 pcs
Salt:
Oil: 1/2 tbsp
Butter: 1/4 tbsp

For White Sauce:
Milk: 2 cup
Unsalted Butter: 50gm
Plain flour: 50 gm
Saltt: 1 tsp
Nutmeg: a small pinch

Method:
Pre heat the oven to 180 degree c for 5 minutes. Cook pasta as per the instruction on the packet and keep aside. Cook chicken with 1 tsp pepper and salt. Heat oil in a pan, add garlic fry for 2 minutes. Add all the vegetables and pepper powder. Cover and cook for 5-10 minutes. Add cooked pasta and chicken to this, stir well. Cook for another 5 minutes in medium flame. Remove from fire and keep aside.

Heat the milk in a pan, add nutmeg powder. Heat butter in another pan, add flour, stir contiously to avoid lumps. Pour milk to this. Keep Stirring untill the sauce thickens. Add salt. Remove the pan from fire.

Grease the baking dish with butter. Pour spagetti sauce, add pasta mixture on the top of the sauce. Then pour the white sauce over the pasta mixture. Add mozrella cheese on the top. Bake for 35 to 40 minutes, or until cheese is browned. Serve hot.

Malabar Chicken Curry




Ingredients:
Chicken: 1 kg
Onion chopped: 3-4 medium
Tomato: 2 medium
Green chilli: 1-2 nos
Ginger: 2 tbsp
Cashmiri chilli powder: 1 1/2 tbsp
Turmeric powder: 1/2 tsp
Cashew nut: 50gm
Thick coconut milk: 2 cup
Think coconut milk: 2 cup
Cloves: 4 nos
Cardamom: 3 nos
Cinnamon stick: 2 nos
Salt: to taste
Curry leaves: few
Vinegar: 1 tsp
Oil:


Method:
Clean and wash chicken, Grind cashew to a smooth paste. Heat oil in a deep bottom pan, add cinnamon, clove and cardamom, saute for 1 minute. Add onion and curry leaves, fry until it turns soft. Add turmeric powder and chilly powder, saute well till the raw smell goes. Add chicken pieces, saute for 5 minutes. Add salt. Pour thin coconut milk and vinegar. Cover and cook for 15 minutes or 3/4 done. Remove lid and add tomato, cover and cook for another 7 minutes. Then pour the thick coconut milk also add the cashew paste. allow it to boil for two seconds. Serve hot

Prawns Roast

Ingredients:
Prawns: 1 kg
Onion chopped: 2 medium
Green chilli: 2 nos
Garlic: 11/2 tbsp
Ginger: 1 1/2 tbsp
Tomato: 1 medium
Coriander powder: 1 tbsp
Chilli powder: 1/2 tbsp
Pepper powder: 3/4 tbsp
Fennel seed powder: 1 tsp
Garam masala powder: 1 tsp
Turmeric powder: 1 tsp
Salt: to taste
Vinegar: 1/2 tbsp

For marinade:
Chilli powder: 1/2 tbsp
Ginger powder: 1 tsp
Pepper powder: 1/4 tbsp
Garlic powder: 1 tsp
Salt: to taste
Lemon juice: 1/2 tbsp

Method:
Wash and clean prwans. Combine chilli powder, ginger and garlic powder, pepper powder, salt with lemon juice and apply this marinade on the prawns, Keep aside for 1/2 hr. Heat oil in a pan, shallow fry both sides and keep aside.

In the same pan, add ginger, garlic and greenchilli, fry for 2-3 minutes. Add onion, fry till soft. Add tomato, saute well till the oil seperates. Then add pepper powder, garam masala, fennel seed powder, turmeric powder, redchilli powder and coriander powder, Saute well till the raw smell goes. Add the fried prawns, vinegar and 1/4 cup water to this, Reduce the heat to low, Close the lid and cook for 05-10 minutes or till the gravy turns thick. Serve hot

Marble Cake/ Zebra Cake


Ingredients:
All-purpose flour: 2 cups
Eggs: 3 nos
Powdered sugar: 11/2 cup
Milk: 3/4 cup
Oil: 1/2 cup
Vanilla essence: 1/2 tsp
Baking powder: 1 1/2 tsp
Baking soda: 1/2 tsp
Cocoa powder: 2 tbsp
Salt: 1/4 tsp

Method
Sieve together all purpose flour, baking powder and baking soda, keep aside. In a mixing bowl, mix sugar and egg, beat till smooth. Pour oil and vanila essence, beat well. Add the flour little by little, Add the milk and beat until the batter turns soft. Divide the mixture into 2 equal portions, Keep one portion plain. Add cocoa powder into another and mix well. Preheat the oven to 180 degree C. Grease the pan with oil. First pour one big spoon of plain batter into the middle of the baking pan. Then pour a big spoon of cocoa batter on top of the plain batter. Continue alternating the batters until finish. Transfer the mixture to the pre heated oven and bake for about 30-35 minutes. Insert a skewer into the center, if its come out clean, Remove from the oven and transfer to a wire rack.
